Strawberry Mini Cakes


Strawberries....
It goes without saying that these red little sweet ,slightly tart berries are the most loved and rank among the most liked fruits in Winters.Strawberries are rooted deep in history with their wide variety of uses they were put to.Popular since the roman times, these berries have been used for various medicinal purposes.Rich in antioxidants,they are like small package of nutritional powerhouse.Healthy for the body...and pleasing for the Eyes..they actually look like mini hearts topped with a green crown.For ages strawberries connote love,passion,healing and romance.Its funny,but the history has it that if you slice the strawberry into half and share with someone ,you would fall in love with each other.This definitely is a valentine fruit.These strawberry mini cakes layered with cake at the bottom topped with red,sweet,mushy strawberries and the top layer has  a rich crumble with chocolate CHIPS.What more can one ask for!

Ingredients:


For Base:
100 gm butter
110 gm fine sugar(Castor)
1 egg
1 cup plain flour
1 tsp baking powder
1 tbsp milk

Strawberry Filling
I pack (10-12) Strawberries sliced
3 tbsp gm butter
½ teaspoon ground nutmeg

Crumble topping
1 cups flour
1 tsp baking powder
100 gm butter
1/2 cup brown brown sugar

Topping

 1/4 cup Choco chips


Method


  1. Preheat your oven at 160°C.
  2. First make the strawberry filling :slice the strawberries.Heat a sauce pan and add butter and sliced strawberries and nutmeg powder.Cook over low heat and cook until softened. Keep aside to cool.
  3. Cream(beat untill creamy) the butter and sugar with an electric mixer. Add the egg and beat again till nicely blended. Add the  flour, baking powder and milk and fold in nicely. 
  4. To make the crumble, mix the flour, baking powder, butter and sugar in a bowl .Rub it with your hands until it resembles breadcrumbs. Set aside.
  5. Now line a 23 cm x 30cm tray with non-stick baking paper.Pour the base batter and spread evenly with a spatula.Now, spread over the strawberry filling.Make sure its evenly spread. Next, put the crumble and and lastly ,sprinkle some choco chips and mix a bit with the flour.
  6. Bake this at 160°C for 40 minutes or until golden.
